pooram / purnam kozhukattai -
In this recipe i have used sago or sabudana or javvarisi for purnam. Shall we go on with this vinayagar chadhurthi special modak now ? YOU CAN WATCH TAMIL VIDEO OF THIS PURNAM KOZHUKATTAI .
Ingredients for purnam
javvarisi / sago / sabudana - 150 g
coconut - 1 cup
jaggaery - 1 cup
cardamom pdr - 1/2 tsp
Ingredients for kozhukattai
idiyappam / kozhukattai flour - 300 g
Method
1.Take sago, and roast it in low flame ( no need to add oil ) till you hear little spluttering. It took 5 minutes for me.
2. After roasting, soak this sago in a cup of warm water. Allow it stay for at least 2 hours. After 2 hours strain the excess water from this sago and keep aside.
3.In a pan add 2 tsp of ghee and roast coconut till it dries up. Now add jaggery, cardamom and mix it. Smash the jaggery lumps with the help of your scoop. Within 2 to 3 minutes it becomes watery because of jaggery.
4.Now you can add sago with this mixture and stir it continuously. After 5 minutes of stirring turn off your stove. Purnam should be mushy and greasy. Don't dry up all the water as it hardens than this texture after cooling. ( SEE VIDEO FOR THIS PURNAM TEXTURE ). Set it aside for cooling it down to room temperature. After cooling make small balls out of this pooranam.
5.Boil 2 cups of water in a vessel and add it slowly with kozhukattai flour. knead the dough as chapati dough.
6.Take a lemon size dough from this, and flatten it between your palms. Place a purnam ball in the center and fold it without any holes ( see video )
7.Steam this modak in a idly pot . Allow steaming for 10 minutes.
8. After steaming give this kozhukattai to your kid and get his lovely smile . Thank you.
