ENNAI KATHIRIRIKKAI KUZHAMBU (TAMIL VIDEO)

Ingredients
Brinjal - 5 small size
Ground tomato - 1
onion - 1/4 cup
garlic - 1/4 cup
mustard seed - 1/4 tsp
cumin seed - 1/4 tsp
fenugreek seed - 1/4 tsp
urad dal - 1/4 tsp
sugar - 1/2 tsp
coriander pdr - 1 1/2 tsp
dry chili pdr - 1 tsp
fennel seed pdr - 1/2 tsp
turmeric - pinch
tamarind - amla size
hing or asafoetida - pinch
curry leaves
Preparation
1. Choose 5 small eggplant, split it like a flower
2. Heat a tsp of oil and fry the brinjal till it become tender.
3. In another pan add 2 tsp of oil and splutter mustard,cumin , fenugreek seeds, and urad dal. Add hing and curry leaves
4. Saute garlic and onion one by one till you get brown colour.
5. Now add half fried brinjals and coriander, chili, fennel seed, turmeric powder.
6. You can now add ground tomato ( ground tomato gives colour and thickness to this curry ). Saute all these ingredients for about 2 minutes.
7. Add tamarind extract with enough water. Add salt as per your taste.
8. Adding a tsp of sugar gives mild sweet taste to this brinjal curry.
This is optional.
9. Cook it in medium flame till brinjal become tender.
10. Now you can serve ennai kathirikkai kulambu with hot steamed rice
