Kootu Ingredients
Chopped white pumpkin or ash gourd - 1 cup
Split bengal gram - 2 tsp
Moong gram - 2 tsp
Onion chopped - 1/2
Chili pdr - 1/2 tsp
Turmeric - pinch
Mustard seed - 1/2 tsp
Urad dal - 1/2 tsp
Ghee or oil - 1/4 tsp
Grated coconut - 2 tsp
Preparation
1. Soak moong dal and bengal gram for 1 hour before cooking.
2. In a pressure cooker add moong dal, chopped ash gourd, bengal gram, onion, chili pdr and turmeric pdr. Cook this mixture for 10 minutes. ( 2 whistle sounds )
3. In a pan add 1/4 tsp of oil or ghee followed by mustard seed, urad dal and curry leaves. After spluttering add cooked ash gourd mixture.
4. Let this mixture to boil for 5 minutes. Now turn off your stove and add 2 tsp of grated coconut and salt.
5. Serve it as kootu rice or with curd rice.
