VEGETABLE BIRYANI RECIPE- VEG BIRYANI

Ingredients
basmathi rice - 200 g
choose any 4 to 5 vegetables - 1/2 cup each
fried onion - 1/2 cup
chopped onion - 1/2 cup
curd - 4 tbs
chili - 2 tsp
chili - 2 tsp
soy sauce - 2 tsp - optional
chili pdr - 1 tsp
chili pdr - 1 tsp
ginger garlic paste - 1 tsp
cashews - few
mint leaves - 1 cup
bay leaf, cinnamon stick, cloves - few
cardamom pdr - 1/2 tsp
fennel seed pdr - 1/2 tsp
cumin seed pdr - 1/2 tsp
garam masala - 1/2 tsp
turmeric - pinchMethod
1. Soak basmathi rice in water for 1 to 2 hour.
2. boil soaked basmathi rice with enough salt ( we have to drain out the water from the cooked rice later, so add little bit extra salt as the rice have to hold right amount of salt ). Add 2 tbsp. of oil with boiling rice to get perfect boiled rice.
3. Rice should be cooked 75 % in boiling water and 25 % along with vegetables. Now drain the water from partially cooked rice and let the rice cool for room temperature as to avoid further cooking with its own steam.
4. Add 4 tsp of oil in a pan & add cinnamon, cloves, bay leaf - Then sauté all vegetables ( you can add peas, cauliflower also )- add all spices, curd, ginger garlic paste, soy sauce ( optional ), chili sauce ( optional ), half cup of mint leaves ( reserve other half cup ) and salt ( We have added salt for rice already. so add salt only for vegetable ) - then add little water for cooking.
5. Let this vegetable cook 75 % in the pan and the 25 % along with rice later.
6. Finally add paneer cubes and mix it gently. Don't allow this vegetable mixture dry up completely. It should be in gravy consistency.
7. Now steam cook these rice and vegetables by using oven or stove.
8. My method - Take a pressure cooker and spread 2 tsp of oil at the base. Add a ladle of partially cooked vegetable first and then a cup of partially cooked rice over it. Sprinkle some fried onions, cilantro, mint leaves over these layers. Make layers like this till all the vegetables and rice has been used.
9. In a wide pan fill the water to half of its height and place the pressure cooker in water without cooker weight. Let it be on steam for 20 minutes ( till the rice and vegetables fully cooked ).
10. Now you can serve this veg biryani with onion raita.
Note - Soaking rice in water for 2 hours gives lengthy rice. You can also pressure cook the rice. Rice water ratio is 1:2. Thank you
