Idly powder / idli podi recipe / gun powder
Idly podi / milagai podi is a coarse mixture of roasted dal and chilies . This can be served as a side dish for idly and dosa. Here is the simple version of idli podi.
Ingredients
Toor dal - 1/2 cup ( thuvaram paruppu )
Urad dal - 1/4 cup
Mustard seed - 1 tsp ( optional )
Cumin seed - 1 tsp
Hing / asafoetida - 3/4 tsp
Dry chili - 10 to 12
Method
1. Roast mustard seed , cumin seed till it splutters ( Roasting should be done on low flame throughout this process ). No need to add oil for roasting. So that you can increase the storing time. Set roasted seeds aside.
2. Then roast toor dal till its colour changes to light brown and flavor comes.- Set it along with roasted mustard, cumin seeds.
3. Now roast urad dal - while roasting stir them continuously to avoid getting burnt. Add hing/ asafoetida , salt with urad dal and stir it for a minute. - set it with other roasted ingredients. SEE VIDEO
4. Finally roast chilies - Let all the ingredients to cool before grinding.
5. Grind it coarsely. Store it in a glass container or air tight box.
6. Delicious, flavorful idly podi is ready. To serve mix it with sesame oil or ghee and serve as an accompaniment for Idly / dosa / adai.
