Medu vada recipe / urud dal vada recipe

Ingrdients

Urad dal - 1 cup ( soaked in water for 1 hour )
onion chopped - 1 cup
green chili chopped - 3
curry leaves chopped - few
suji rawa/ semolina - 1/2 cup / 100 g

Method

1. Grind soaked urad dal with green chili - Add very little water for grindinig. Batter should be thicker than idly batter. See the video ( In this page ) to see the consistency of the batter.
2. Add chopped onion, chopped curry leaves, sooji rawa, salt with batter. Mix it well. You can get crispy vada by adding suji rava. And also suji rawa absorbs excess water if the batter holds excess. But adding rice flour to thicken the batter will result in hard vadas.
3. Heat a kadai with oil for deep frying. Wet your hand with water before making vadas
4. Take a thick plastic papper , or banana leaf and take a big lemon size batter ( you can shape it perfectly by wet hands ). Put the batter in the center of the papper  - make a hole in the center with your thumb.
5. Now slid the vada to the hot oil. Make sure your oil is hot enough before dropping vadas.Once you put the vadas to the oil, turn the flame to low till you flip it over. At the time of flipping it over again turn the flame on higher mode till you start next round. Repeat the same method again. 
6. You can fry 4 or 5 vadas at a time. Ulundha vadai is a very healthy snack for growing children. Serve them vada with coconut chutney.
