Bitter melon fry recipe
Ingredients - Bitter melon chips
bitter gourd - 1
chili pdr - 1/2 tsp
salt - 1/2 tsp
curd - 1/2 tsp
corn flour - 1/2 tsp
turmeric pdr - 1/4 tsp
oil
Method - pavakkai varuval / bitter melon chips
1. Make thin pieces of bitter melon using potato slicer.
2. Boil 2 cups of water in a pot - once it boils turn off the flame and add bitter melon slices into the hot water. Let it stay in hot water for only 3 minutes, then remove it from water ( By this method we can avoid watery marinated bitter gourd slices after adding all spices with it ).
3. Add all powder spices ( chili pdr, salt, curd, corn flour, turmeric pdr, ) with cooled bitter melon slices. Let it sit for 20 to 30 minutes.
4. Heat frying oil and add bitter gourd slices, Fry them till it turns brown and crispy.
5. Serve it with curd rice.
