coriander leaves rice - variety rice/ malli sadham

coriander leaves rice - மல்லி சாதம்

 

Ingredients - coriander leaves rice

coriander leaves - 1 cup
cooked rice - 1 cup
butter or ghee - 1 tsp
paneer cubes - 50 g
cashews - 10 no.( you can choose chana dal / kadalai paruppu  instead )
green chili - 1( to taste )
garlic - 2
ginger - small piece
mustard seed - 1/2 tsp
urad dal - 1/2 tsp

Method - coriander leaves rice

1. Grind coriander leaves, green chili, ginger, garlic to a fine paste - set it aside.
2. In a pan add a tsp of oil and fry cashews , Once it starts to brown add paneer  cubes also. Fry it for 10 sec. Then keep then in a bowl for final garnishing.
3. Again add a tsp of oil + butter  in a pan and add mustard seed , urad dal, Once it splutters add ground coriander mixture. Let it dry up on high flame for 3 to 4 minutes.
4. Now add cooked rice and salt with partially dried coriander mixture and mix it well. Garnish it with cashews and paneer.
5. You can use any rice for cooking this coriander leaves rice.
