How to make idiyappam

 

Ingredients - idiyappam

Idiyappam flour - 2 cup - 200g
chopped onion -1/2cup
curry leaves -
curd - 1 tsp
green chili - 2 or 3
mustard seed - 1/2 tsp
urad dal - 1/2 tsp
salt

Method - idiyappam

Idiyappam method

1. Add salt with dry flour and mix it. Heat 3 cups ( approximately ) water in a pot for preparing dough. ( If your flour is chill flour ie refrigerated flour water should get high boiling point. If the flour is in room temperature, boiling water should be in bubbling hot, that is small bubbles from the sides and bottom of the pot begin to appear.  - If the temperature is below the boiling point, which I mentioned here will result in rough idiyappam, and above this boiling point results in over soft idiyappan . It could not be separated. ) - SEE VIDEO
2. Knead the dough by adding water slowly - Don't allow it to dry. cover it with a suitable lid. Don't try to get right dough consistency by adding room temperature water. ( If do so you can make kozhukattai only, not idiyappam )
3. Fill the dough into the idiyappam maker.
4. Heat the idly pot till it steams. Then squeeze the dough by pressing the idiyappam maker. Don't squeeze it one over the other ( you can't separate it easily ). squeeze it by next line. Cover the idly pot till you refill the dough into maker. Within this refilling time it will get cooked well. Then you can squeeze the next round over the cooked idiyappam ( can be separated easily )

Salted spicy idiyappam

1. Add 4 tbsp. of water with curd and pour this buttermilk over the cooked idiyappam. This method gives awesome flavor to idiyappam. You can adjust salt by adding it with this butter milk.
2. Now you can separate it easily since you have added buttermilk. Separate idiyappam with bare hands instead of ladle. Idiyappam absorbs buttermilk and still it is dry.
3. Heat a pan with a tsp of oil and add mustard seed & urad dal. Once it splutters sauté onions, curry leaves, green chilies for 3 minutes ( till it turns brown ).
4. Finally add separated idiyappam and mix it well.
5. Now you can serve this idiyappam with tomato sambhar.
