Coconut burfi

Ingredients - Coconut burfi

Grated coconut - from 1 coconut
Sugar - 150 g
Cardamom - 1 tsp
Milk - 1 cup
Cashews - 10 to 12
Raisins - 1 tbsp

Method - Coconut burfi

1. Heat 1/2 tsp of ghee, fry cashews and raisins and set aside. In the same kadai fry grated coconut for a minute or 2 ( don't let it turn brown )

2. Now pour a cup of milk and add sugar with fried coconut. Continue heating with constant stirring with medium flame. The sugar and the milk will form a thick liquid. Continue stirring till the mixture starts leaving the pan and add fried cashews and raisins.  Shift this mixture to a ghee greased container. 

3. Cut it into pieces once it is cooled to room temperature.

4. Now sweet coconut burfi is ready to enjoy.
