How to make adai dosai / Multi dal dosa
Ingredients to make adai dosa batter
Chana gram / kadalai paruppu - 1/2 cup
Toor dal / thuvaram paruppu - 1/2 cup
Moong gram / pasi paruppu - 4 tbsp
Urad dal - 4 tbsp
Rice - 1 1/2 cup
Cumin seed - 1 tsp
dry chilli - 4
Hing ( asafoetida ) & Turmeric - 1/2 tsp each

Finely chopped onion - 1 cup

Method - How to make adai dosai
1. Soak rice and dals in a separate bowl for 1 hour.
2. Add cumin seed, dry chilli, hing & turmeric pdr with soaked rice. Let it be soaked with rice.
3.First grind rice in a wet grinder or mixie. Ground rice should be in suji rawa texture( like kichadi rice rava ). Then add moong dal, toor dal, urad dal, chana gram with ground rice ( no need to shift rice from grinder )
Now grind soaked dals for 3 minutes. Within this time it will get coarsely grinded ( coarse texture )
4. Shift this adai dosa batter to a container , add salt, chopped onions, curry & coriander leaves ( If available, add drumstick leaves with batter, it will be very flavourful ). Now adai dosa batter is ready to make adai dosas.
5. Now heat a tawa & wipe it with a oily cloth as to make easy when you flip over the dosa. Once it is hot , slow the flame and pour a ladle of batter and spread it as ordinary dosa. Now turn the flame to medium, cover the tawa and let it cook for a minute, then flip it over. Pour a tsp of oil and again let it cook for a minute. Now delicious adai dosa is ready to serve.
