Tomato Pulav / pulao
( Tomato rice )
Ingredients -
Tomato pulao / pulav
Basmathi rice - 1 cup ( should be soaked in 2 cups of water for 1 hour in advance )
Chopped tomato - 2
Chopped onion - 1/2 cup
Carrot, beans, capsicum - 1/4 cup each
Cinnamon, cardamom, cloves - few
Fennel seed - 1/2 tsp
Cashews - 8 to 10 no.
Chilli pdr - 1/2 tsp
Coriander pdr - 1/2 tsp
Turmeric pdr - pinch
Ginger garlic paste - 1/2 tsp
Method - Tomato pulao / pulav
1. Heat a kadai with a tsp of oil, fry fennel seeds, cashews, cinnamon, cloves for a minute. Then saute onion, curry leaves, vegetables for 2 minutes. Now add soaked rice ( keep the water aside, in which rice has been soaked , we have to use this measured water for pressure cooking later ) and fry rice for 2 minutes. Finally add chopped tomatoes, stir them well till they blend enough.
2. Add salt and 1/2 tsp of ghee with fried mixture. Shift this vegetable, rice mixture to a pressure cooker, and pour the measured rice water which we have reserved previously.
3. Let it cook for a pressure sound on high flame. Once the cooker's temperature subsides, open it and garnish tomato pulao with cilantro.
4. Serve this tomato rice with onion raita.
