 Mint leaf rice - Pudhina rice / Podhina rice - Variety rice recipe

This mint pulao makes a healthy lunch box menu.To prepare this variety rice recipe we need only a handful of ingredients.

Ingredients

cooked rice - 1 cup
mint leaves - small bundle
green chili - 1
ginger - a small piece
garlic - 2
peanuts - 2 tbsp
mustard seed - 1 tsp
urad dal - 1 tsp
dry chili - 2
oil, ghee, salt

Method

For pressure cooking ponni rice you need 3 1/2 cups of water for a cup of rice. For basmathi rice you need 2 cups of water for a cup of rice.
1. Grind mint leaves, green chili, garlic, ginger to a fine paste. Add very little water for grinding.Set it aside.
2. Roast peanuts on low flame and set aside.
3.Heat a tsp of ghee in a kadai and add mustards, urad dal, dry chili, curry leaves.
4.Once it splutters add ground pudhina paste to it,add salt. Let it boil for a minute and allow to dry up. After that you can add cooked rice with it & mix well. SEE VIDEO
5. Pudina rice is ready to serve now.
