Spicy Andra idly powder - Chutney powder/idli podi

Idly podi recipe

 

Ingredients - Andra idly podi

coriander seeds - 1/4 cup
urad dal - 1/4 cup
toor dal - 2 tbsp.
hing / asafoetida / perungayam - 1/2 tsp
dry chilies - 10 to 12
cumin seeds - 1 tsp
garlic - 2
salt , oil

Method - Andra idly podi

1. Keep the flame low throughout the preparation. Fry the ingredients one by one. Stirring should be done continuously as to avoid being burnt.
2. In a kadai add 1/2 tsp oil ( not more than ) and fry urad dal till it turns brown. Set aside.
3. Fry coriander seeds till it begins to splutter - set it with fried urad dal
4. Fry toor dal, chilies.
5. Fry cumin seeds and garlic for a minute till seed seems to splutter ( you can add raw garlics also )
6. Give a fraction of stirring to asafetida in the hot pan ( turn off the stove for frying asafoetida ).
7. Let the ingredients come to room temperature before grinding. Grind them with salt to coarse powder. SEE VIDEO
8. Mix a tsp of dal chutney powder / idly podi with 2 tsp of sesame oil ( nallennai ) to have with idly and dosa.
