Cauliflower curry for chapati

Ingredients - Cauliflower curry for chapati

Cauliflower - 1/4 kg
Coconut - 1 cup
Tomato - 1
Onion - 1
Cashews - few
Garam masala - 1 tsp
Fennel seed pdr - 1/2 tsp
Turmeric pdr - pinch
Chilli pdr - 1 tsp
Ginger garlic paste - 1 tsp
Mustard seed - 1 tsp
Urda dal - 1/2 tsp
Cumin seed - 1/2 tsp

Method - Cauliflower curry for chapati

1. Add cauliflower pieces in boiling water only for 2 minutes ( not more than ), then remove it from water. Now roast them in a tawa with less oil or shallow fry it ( boiling cauliflower reduces the the roasting time and also gives soft cauliflowers). Set aside.

2. Heat a kadai with a tsp of oil, fry cashews, coconut, tomatoes for 3 to 4 minutes. Now grind them with all other spices ( chilli pdr, garam masala pdr, turmeric, ginger garlic paste, fennel seed pdr ). Set aside.

3. Heat a tsp of oil, add mustard seed, cumin seed, urad dal.. Let it crackle. Then saute onions, curry leaves, cauliflower for a minute. Add ground coconut masala paste, salt and let it boil for 5 to 8 minutes on high flame. 

4. Garnish it with coriander leaves, gobi curry / cauliflower curry is ready to serve. This gobi curry goes well with chapati, roti, naan.
