Chicken masala - Kozhi masala

( South Indian Chicken Masala )

Ingredients - Chicken masala - Kozhi masala

Chicken - 1/2 kg
Onion chopped - 1 cup
Garlic - 1/4 cup
Tomato - 2
Coriander pdr - 2 tsp
Chilli pdr - 1 1/2 tsp
Cardamom pdr - pinch
Fennel seed pdr - 1/2 tsp
Ginger garlic paste - 1/2 tsp
Curry leaves - 
Cinnamon, cloves - few

Seasoning ingredients - Chicken masala - Kozhi masala

Mustard seed - 1 tsp
Cumin seed - 1 tsp

Method - Chicken masala - Kozhi masala

1. Heat 4 tsp of oil, crackle mustard seed, urad dal. Saute garlic, onion, curry leaves for 2 minutes or till they turn tender. Now add tomato, ginger garlic paste, all spice powders, cinnamon, cloves. Stir them for 2 minutes. Finally add chicken pieces. 
2. Add required water for cooking. Chicken pieces release water when boiling, so add very little water for cooking. Otherwise drying up the excess water will take more time. Add salt with chicken masala.
3. Shift this chicken masala mixture to a pressure cooker and let it cook for 2 or 3 pressure sounds. ( may take 10 to 15 minutes on high flame )
4. Don't remove the cooker weight before its pressure subsides, it will result in under cooked chicken masala. So wait till the temperature subsides, then open it. If there is left out water let it dry up completely, Garnish chicken masala / kozhi masala with cilantro.
