Jalebi sweet

Jalebi sweet

Ingredients - Jalebi sweet

All purpose flour / maida flour - 1 cup
Sugar - 1 cup
Water for sugar - 1/2 cup
Corn flour - 1/2 tsp
curd - 1 tsp
Baking pdr - 1/2 tsp
Food colour
Cardamom pdr - pinch
( use the same cup for measuring )

Method - Jalebi sweet

1. In a bowl mix all purpose flour and curd, Then pour water little by little and prepare the batter which should be in dosa batter consistency. Close it with a suitable lid. Let it sit for 8 hours for fermenting.

2. After 8 hours, add food colour, corn flour, baking pdr with fermented all purpose batter. Mix well

3. Boil a cup of sugar with 3/4 cup of water in a pan, Let it boil till you get smooth sugar syrup ( before you get the one thread consistency ) ie. when you pour this syrup by a ladle it should get poured like a smooth thread.

4. Fill the batter into a plastic cover which holds small hole at one corner or use ketchup bottle.

5. Heat oil in a pan on the other side. After oil is hot, squeeze the batter from the cover in small circles ( jalebi shape ). Fry both sides till jalebis get light dark colour.

6. Now dip the fried jalebis in sugar syrup and shift it to a separate  plate.

7. Jalebi is ready to enjoy.
